A tasty green cake for St. Patrick's Day.
PISTACHIO CAKE
Serves 16
CAKE INGREDIENTS:
1 white cake mix (2-layer size)
1 instant pistachio pudding mix (4-person size)
4 eggs
½ cup cooking oil
1 cup club soda
2 drops green food coloring
ICING INGREDIENTS:
1 envelope dessert topping
½ cup milk
1 instant pistachio pudding mix (4-person size)
½ cup milk
Optional decorations:
¼ cup shelled, crushed pistachios
¼ cup Cadbury chocolate mini-eggs
Preheat oven to 350 F.
Mix all six cake ingredients well. Fold into a greased 10” angel food cake pan. Bake for 50 minutes until an inserted toothpick comes out clean. Let stand for 15 minutes, then invert onto a baking rack to cool.
Once cake is completely cooked, using a mixer, mix dessert topping and ½ cup of milk. Add pudding powder last 1/2 cup of milk, and mix until stiff.
Ice sides and top of cake quickly. This icing sets RAPIDLY.
Sprinkle crushed pistachios in a shamrock for St. Patrick’s Day. For Easter, decorate with mini-eggs.
